Black bean brownies?! You bet!
Ingredients
1 can black beans (15.5 oz rinsed & drained)
3 eggs
1/4 c. cocoa powder
3 T. coconut oil (or olive oil, etc.)
1/2 t. salt
2 t. vanilla extract
3/4 c. white sugar (or you can substitute all or part of it with honey/agave nectar! I’ve done it both ways & they turn out amazing!)
1 t. instant coffee
3/4 c. dark chocolate chips
Directions
- Preheat oven to 350 degrees. Grease an 8×8 baking dish.
- Combine black beans, eggs, oil, cocoa powder, salt, vanilla extract, sugar, and instant coffee in a blender (or food processor); blend until smooth; pour the mixture into the baking dish. Sprinkle the chocolate chips over the top of the mixture.
- Bake about 25-30 min.
